Manchurian Chicken
With over 1 billion people in India, it’s not surprising how abundant and varying Indian cuisine is. After my visit there this summer it’s apparent that every district of India has invented their own type of samosa, their own chicken tikka masala, all with varying degrees of spice.

I had the fortune (or more like the misfortune) of spending my Thanksgiving Holiday en route to and ultimately in Louisville Kentucky. Now I am not sure if Kentucky is even considered Middle America, but as far as my travels are concerned, it is. Why you ask, was I in such a peculiar place on such a day of thanks and giving? No I was not visiting family, I was actually preparing to photograph an early morning Rutgers football game the next day.
